Among my mother's home cooking, I've been craving some good ole' Pollo Tropical for a long time now. When I finally took my lazy ass over to the supermarket, I knew that I was pretty much all chickened-out, so I decided to experiment with pork, instead.
So what you have below is white, long-grain Jasmine rice, black beans, salsa and pan-seared pork chops that I finished off in the oven at 400 degrees for about a half hour and garnished with some shredded Mexican-blend cheese. Aye! Dios mios! Finger lickin good!
